Unit's custom built and shipped from the manufacturer. Build time is 4-6 weeks. The Backwoods Competitor Unit has available options (for an extra fee) such as thermostatically controlled gas burners, which will take over after charcoal and wood drops below set point. Other options are an automatic water filler to maintain a constant water level and a convection system to maintain an even temperature from top to bottom in the cooking chamber. There is also a removable water pan for baking in the Competitor. All our units are available in Stainless Steel. The Competitor has eight (8) shelves that are 19 1/2" by 19 1/2" in size and spaced 3" apart. This unit cooks between 225 to 250 degrees on approximately 8-9 pounds of charcoal and wood for flavoring. The unit will maintain this heat for 6-7 hours. For larger pieces of meat, charcoal and water will need to be added.
