Very delicate with a hint of sweetness. Alder has a cleaner flavor that's smoky, but not peppery, with hints of vanilla. It goes well with sauces that contain bacon or tomatoes. Good with beef, fish, pork, poultry, and light-meat game birds. Traditionally used in the Pacific Northwest to smoke Salmon.
Next to Apple, this one is my first choice for Salmon. Works well with the same meats as Apple, but is not quite as sweet.
